Lyophilization is one of the most beneficial ways to preserve fruits and vegetables.
What is the lyophilization process?
Lyophilization is based on one of the properties of water: ice water at -30🌡️C to -60 🌡️C evaporates under the action of vacuum. In short: water evaporates from frozen products at low temperatures, keeping 100% of their properties, thus obtaining a fruit or vegetable squeezed from water and with all nutritional values untouched.
Advantages of lyophilizated fruits:
freeze-dried fruits are incomparable to candied fruits because they do not contain excess sugar, are not rich in carbohydrates and do not have a high calorie intake;
freeze-dried fruits are incomparable to dried fruits, because they have not lost their nutritional value, do not contain dyes or food additives;
freeze-dried fruits are incomparable to frozen fruits because they do not contain excess water and can be stored not only in the freezer;
and due to the fact that they do not contain water, freeze-dried fruits can be stored for a long time in their original packaging, without having contact with the external environment.
How to eat Lyophilizated fruits:
The freeze-dried fruit or vegetable returns to its original shape, keeping all its nutrients intact, once in contact with liquid foods - water, fruit juice, milk, yogurt, etc. Also, from 30 gr. of lyophilized vegetable / fruit, can be reconstituted, after the addition of water, about 300 gr. of fruit and can be used, as well as fresh fruit, in various combinations.
