You will need:
1000 gr. milk (3.2% fat)
500 gr. natural cream (36% fat)
500 gr. real belgian dark chocolate 56%
50 gr. concentrated almond paste
stainless steel shape
saucepan

You will cook like this:
You will mix the milk and natural cream in a saucepan and bring them to a boil. Then you will pour the chocolate and stir until it melts, and then you will return the mass obtained to the boiling state. You will light the fire as slowly as possible and stir continuously for 8 minutes. You will add the concentrated almond paste and let it cool. You will serve hot chocolate from 60 🌡️ C to 75 🌡️ C.

Secret:
A wide range of delicious hot chocolate flavors can be obtained just by adding a little concentrated nut paste or spices.
