Today we will help you prepare pumpkin stuffed with couscous and vegetables, a quick and easy recipe that sounds and looks fantastic!
You will need:
4 small pumpkins
200 gr. cuscus Lestello
2 eggplants
1 red
1 carrot
1 onion
2 cloves of garlic
1 cup orange juice
1/2 cup tomato juice
1 tablespoon olive oil
Spices: 1 teaspoon (curry, ground cumin, salt, green pepper) 1/2 teaspoon cinnamon
You will cook like this:
You will cut the pumpkins about 2/3 of their height and you will remove the seeds and the pulp from the center. Grease the pumpkins with oil inside and sprinkle with salt, then place the pumpkins in a preheated oven at 180 degrees for about 30 minutes. Meanwhile, mix all the spices, then heat the olive oil in a deep pan and add the spices. Cut the eggplant and carrots into cubes and add them to the pan, frying until the eggplant turns light brown, then add the onion and chopped garlic. When the onion becomes soft, you will add the diced tomatoes and you will add orange and tomato juice and half a glass of water. Boil everything for about 5 minutes, then take the pan off the heat and mix with the raw couscous. You will then fill the baked pumpkins with the filling and bake them at 180 degrees for about 20 minutes. When you take the pumpkins out of the oven, you can decorate them as you wish.
